One year later

 Barbecue season starts tonight.  I’ll bet you didn’t know there was a season for barbecue.  Heck, if you’re like me, barbecue is in season year round!  But the competition season starts tonight with the ancillary judging at the South Mississippi Boucherie. It’s a relatively new contest but it’s become one of the biggest and best contests of the year.   I was a judge for the first Boucherie in 2019. In 2020, because of covid, it was canceled.  I was back in 2021, 2022, and last year.  Last year is what I want to talk about today.  I’ll never forget that morning.   The Boucherie (French for butcher) is held the last Saturday in March.  Last year was a beautiful, sunny spring day after a night of heavy rain and strong storms.
